Epazote is a popular Central American herb used by native Mexicans. It has a strong musky flavour.

It is used to flavour traditional Mexican dishes and can be used to season quesadillas and sopes (especially those containing huitlacoche), soups, mole de olla, tamales with cheese and chilli, chilaquiles, eggs and potatoes and enchiladas.
